- 160 g vegan mozzarella by VANOZZA
- 2-3 figs
- Fresh thyme
Walnut pesto
- 80 g walnuts
- 80 g pine nuts
- 1 garlic clove
- 40 g Old Italian by VANOZZA
- 100 ml olive oil
- Salt, pepper

Toast the pine nuts in a dry pan for 2-3 minutes, tossing frequently.

Add the toasted pine nuts, walnuts, garlic, Old Italian, and olive oil to a blender and blend. Season to taste with salt and pepper.

Slice the figs and mozzarella and arrange them on a plate in alternating layers. Drizzle with the walnut pesto and garnish with fresh thyme.
