An Italian classic with a modern twist. Instead of the traditional tomato-mozzarella pairing, we combine sweet figs with VANOZZA Mozzarella and a homemade walnut pesto. Vegan, gluten-free, and perfect as an appetizer or a side for your barbecue spread.

Ingredients

Main dish

  • 160 g vegan mozzarella by VANOZZA
  • 2-3 figs
  • Fresh thyme

Walnut pesto

  • 80 g walnuts
  • 80 g pine nuts
  • 1 garlic clove
  • 40 g Old Italian by VANOZZA
  • 100 ml olive oil
  • Salt, pepper

Instructions

    Toast the pine nuts in a dry pan for 2-3 minutes, tossing frequently.

    Add the toasted pine nuts, walnuts, garlic, Old Italian, and olive oil to a blender and blend. Season to taste with salt and pepper.

    Slice the figs and mozzarella and arrange them on a plate in alternating layers. Drizzle with the walnut pesto and garnish with fresh thyme.
